We could say that this tablet and its twin Slow Dried are out of the norm for two things, it is the only origin (at the moment in 2021) outside of Central America that Friis Holm works.
It is a double project (as with Chuno or Rugoso) in which tablets are made with the same cocoa processed in a different way.
In this case, it is a "quick-drying" cocoa, that is, it has been dried in a very intense sun for a sufficient time to reach 7% humidity.
This quick process makes the acidic fruit trees of this cocoa dominate in this tablet.
We recommend comparing and tasting at the same time with the Slow Dried version.
